When I think of spring desserts I certainly think of key lime cheesecake! A sour yet sweet cheesecake dessert that makes me think of sandy beaches, sunshine, and bright colorful picnic settings. This keto key lime cheesecake is a mug cake perfect for spring! A single serving dessert you came make ahead. Great for individual desserts on a dessert table. Is cheesecake still jiggly when done?
When baking cheesecakes in the microwave you want to be careful not to OVER cook it! The center will have a little jiggle to it and look wet but if it doesn't slosh around when you give the mug a swirl it is done.

Recipe for Key Lime Mug Cheese Cake
Ingredients
- 2 oz of softened cream cheese
- 2 & ½ tablespoons swerve
- one-half tsp vanilla
- 2 tablespoons sour cream
- 1 large egg
- Fresh lime juice
- grated lime peel
Instructions
- First, you'll want to soften your cream cheese. If you haven't had it out at room temperature you can pop it in the microwave for 5-10 seconds to soften it up.
- Second, grate your lime peel before and then cut it in half.
- Next, beat one egg in a microwaveable dish.
- Mix all the ingredients together. It works best with a small mixer (as shown in the video). But you wouldn't have to… Since your cream cheese is softened you should be able to put some muscle into it and get it mixed well.
- Microwave 1:45 full power.
- Let sit for 1 minute in the microwave then give it a small shake. If it moves, microwave a little more in 10-second intervals.
7. Let it rest and set in between.
8. Cool in the refrigerator for at least 1 hour.
Notes on making Key Lime Mug Cheese Cake
- The middle will appear wet, but it will set.
- Don’t overcook it. When the edges are set it is done.
- You can skip the grated lime peel if you are using lime juice from a container but you won't get the same flavor as fresh lime juice and peel. The peel adds way more flavor than you would think!
- You can add a crust to this cheesecake very easily. It's very similar to the follow the steps below.

- one tablespoon and room temperature butter
- 1 tablespoon coconut flour
Optional Crust Instructions
First, mix the coconut flour and butter. It should be a crumble. Then press the crumble mixture into the bottom of your microwavable dish. Finally, add your key lime cheesecake mixture over top before microwaving.
