Refreshing Lime Cucumber Dill Veggie Dip

Crunchy fresh Cucumbers, pepper, carrots, celery, broccoli and sugar snap peas on a tray with crackers with a creamy cucumber dill veggie dip in the center.

Ingredients

1 cup Mayonnaise (I have substituted Greek Yogurt before and it’s a great substitution.  It just has a different consistency after it’s refrigerated.)

8 oz Cream Cheese

1 tsp Garlic Powder

1 Cucumber seeded/diced (optional: peeled)

Dash of Hot Pepper Tabasco sauce

1 tsp Fresh Lime Juice

1 tbsp of Dried Dill Weed (I like to add more.)

Salt and Pepper to taste

Instructions

  1. Mix the Mayonnaise and cream cheese together in a bowl.   Then, add lime juice, hot sauce and seasonings.
  2. Peel/de-seed and dice the cucumber.
  3. Fold in the diced cucumber. Refrigerate 2 or more hours for best results.  Good for 2-3 days refrigerated.
